There are always the casino jobs. I've known busmen who made good money clearing tables in the nicer dining rooms such as Palace Court at Caesar's. Same with waitress work. In Las Vegas, there are also schools, hospitals, many corporate offices, etc. so your choices are many. Just choose what you'd like or know & find out what it takes to do it then go for it.
